Fresh & Refined focus on fish and seafood

Both brothers Bimm, Alex and Eric, owners and operators of Le Poisson Bleu are restaurant industry veterans. Working at some of the top establishments in the city they combined their affinity for seafood and hospitality and created something truly special and unique. 


The project was an existing restaurant but still needed to be remapped and redesigned to fit the needs of the food program. We worked in tandem with the brothers Bimm to deliver the project both on time and on budget.


Working with difficult dimensions and angles we were able to overcome equipment sizing and placement obstacles and deliver solutions to a difficult space that is now service ready due to comprehensive planning with service and fluidity in mind.
