Apple Crostata with Salted Caramel

Ingredients

  • 6 large apples sliced thin *mix of green and yellow
  • 2 tbs sugar for sprinkling

Salted Caramel Sauce

  • 1 cup sugar
  • ½ cup butter cut in cubes
  • ½ cup whipping cream
  • 1 tsp salt
  • 1 tsp ground cardamom

Pastry

  • cups flour
  • 2 tbs sugar
  • 1 tsp salt
  • 2 sticks 1 cup cold butter, grated or cut into small cubes
  • 1 egg yolk
  • ¼ cup ice water may need more

Egg Wash

  • 1 egg yolk
  • 1 tsp water

Filling

  • 4 oz cream cheese
  • 1 egg yolk
  • 2 tbs sugar
  • 1 tbs flour
  • 1 tsp vanilla

Instructions

Caramel Sauce

  • Put the sugar in a dry heavy bottom skillet. Turn heat to medium high and allow sugar to melt. Swirl around to heat evenly.
  • When the sugar is a deep amber color take it off the heat. Add the butter and whisk in to melt fully then pour in the whipping cream and whisk until incorporated. Season with salt. Set aside to cool. Store in a clean glass jar with a lid.

Pastry

  • In a bowl place the flour, sugar, salt and whisk together. Add cold butter and work in the flour to coat and form a moist, crumbly dough.
  • Make a well in the center and add the yolk and ice water. Mix quickly with a fork to moisten the flour mixture. By hand mix briefly until it clumps together.
  • Turn out onto a clean surface, gather the sides and press to form a cohesive pastry dough. Divide into 2 or 4 equal sized discs. Wrap each in saran wrap and let rest in the fridge for 35-45 minutes.

Filling

  • Combine all the ingredients for filling into a small bowl, mix well and set aside.
  • Using a mandoline or a sharp knife slice the apples very thin (skin on).

Assembly

  • Preheat oven to 400F. Roll out the dough discs on a lightly floured surface. Spread some cream cheese filling starting in the center and leaving a 11/2” border.
  • Arrange the apples in clusters on top of the filling. Sprinkle with sugar.
  • Fold over the pastry to create a border.
  • Brush with the eggwash and sprinkle with additional sugar and bake at 400F for 15 minutes. Lower heat to 350F and bake until the pastry is golden and crisp and apples are fully cooked but not mushy (approximately 15 more minutes).
  • Serve warm with caramel sauce and ice cream.

CHEF’S TIPS
For apples, Granny Smith, Cortland, Golden Delicious all work well.
Ensure that the butter and water are very cold.
