Pomegranate & Cucumber Salad


  • 1 x 400g clamshell of arugula
  • 1 English cucumber
  • 1 pomegranate seeded or ¼ cup prepared pomegranate seeds
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • Salt
  • 1 tbsp Sumac

Pomegranate Molasses Vinaigrette

  • 1 Shallot finely chopped
  • 2 Garlic cloves smashed and finely chopped
  • ½ cup pomegranate molasses
  • 3 tbsp lemon juice
  • 3 tbsp olive oil
  • 3 tbsp water


  • Prepare the salad by dressing the arugula with olive oil, lemon juice and salt. Cut the cucumber into 3 sections and shave lengthwise on a mandolin / box slicer into thin strips. Then, dress the cucumbers with lemon, olive oil, salt and sumac.
  • To plate the salad, place the dressed arugula in the middle of a salad bowl. Top with the dressed cucumber ribbons and sprinkle the pomegranate seeds over top. Drizzle the vinaigrette around the salad.

Chef's Tips

Pomegranate molasses and sumac can be found at most Middle Eastern or Iranian grocery stores.
